Put this healthy lentil pasta salad together in less than 10 minutes! This is a protein packed, vibrant, colourful dish, filled with nourishing whole foods like broccoli & bell peppers. This red lentil pasta salad recipe is perfect for busy days. It is a healthier, heartier alternative to plain ol’ pasta and sauce.
Is Lentil Pasta Gluten-Free?
Yes! If you’re gluten-free, this recipe is safe for you (just make sure you read your labels and that you use tamari instead of soy sauce!) You can even make this meal fully vegan by replacing the honey with maple syrup.
What Does Lentil Pasta Taste Like?
If you’ve never tried lentil pasta before, I think it’s important that you know: lentil noodles REALLY taste like lentils. That said, they pair beautifully with the lightly steamed broc & the sweet tahini dressing! We really love the GoGo Qunioa brand as it’s super high in protein and has a nice texture. You might be also wondering, how long does lentil pasta take to cook? It only takes 7 to 10 minutes, depending on your desired level of al-dente.
If you can’t find lentil pasta locally, you can find the same fusili that we used here: https://amzn.to/2Zi7R0U or this lovely penne here: https://amzn.to/3ai8C0b
Enjoy this plant-based super meal & feel free to change it up – try adding different coloured peppers, or if it’s in season, feel free to add some torn fresh basil to the mix!
